Time for the Elderflower (Sambucus nigra)! Ever stopped by an Elder and pressed your nose into the blossoming blossoms? On my walk I came across the bush at the edge of the forest. The distinct smell alone is an experience. It somewhat resembles baked popcorn, though, not everyone likes the scent. You can harvest and dry the blossom, for using it in other seasons, for example as infusion (of max. 80°C, to evaporate fewer essential oils). If possible, try to catch the pollen during the drying process, because the constituents in it exert an influence against various influenza viruses such as the flu. Happy sniffing!
